Easy Do-it-Yourself Wedding Cake

It has been a year since my sister eloped with her long-time boyfriend of 10 years. She asked me last minute to be their witness, and of course, I accepted. But I also couldn’t resist offering them a handmade bouquet of fresh flowers, a wedding-style cake, and also fill in as an amateur photographer for their special day.

They married close to the time of year of  Dia de los Muertos, or Day of the Dead. It’s a Mexican holiday that celebrates the lives of the once living and is wildly popular here in Tucson, being so close to Mexico and all. My sister, Nobi, had a small Dia de los Muertos wedding couple figurine that she wanted me to use as a wedding cake topper. It worked out perfectly.

As for the cake, I don’t think it can get easier than this. I bought a mini lemon cake and a small cheesecake (my sister’s favorite) at the Cheesecake Factory. Then I whipped up some homemade butter-cream frosting, stacked the mini lemon cake on top of the cheesecake, and then slathered a nice layer of frosting all over, creating a seamless, uniform look. It literally looked like a miniature wedding cake.

Once that was done, all it needed was decorations. I put on the cake topper and some fresh dahlia’s around the sides. It was gorgeous.

My sister loved it!

I was so happy I was able to make her special day even more special.

Take this idea and apply it any time of year, using different seasonal flowers, ribbon, and cake toppers, to make it your own.

 

I covered the bottom of my sister’s cake topper with plastic wrap, to protect it, and just in case the paint wasn’t edible..

It tasted as good as it looked.
